2022 Piquette
A tradition, implemented by vineyard workers & family members, Piquette is made by rehydrating pressed grape skins and then fermenting the remaining sugars, resulting in a low-alcohol wine-like beverage, often with a little spritz! Only 33 cases produced.

Nose: Hibiscus, Cranberry, bubblegum
Palate: Nectarine, lychee
Production notes
Our Piquette began after pressing off the juice from the 24k Mourvèdre. Water was then added to the skins at a 1:1 ratio and left to soak for 24 hours. The juice was again pressed off the skins into a small stainless-steel tank where it would undergo fermentation. Like the Pét-Nat, Piquette was fermented until near dry (1.5 Brix) and then bottled. The fermentation finished in-bottle creating a hint of carbonation. UNFINED/UNFILTERED/UN-DISGORGED.
