2022 Pét-Nat Rosé

Production notes
The 24k Grenache was hand-picked on October 26th. The fruit was crushed, destemmed, and left to soak on skins for approximately six hours. After pressing, the juice was transferred into a stainless-steel tank, cold-settled for 72 hours, and racked off the gross lees. This wine was fermented cold at 58° for two weeks. Once fermentation reached a Brix measurement of 1.5°, the wine was bottled. Primary fermentation finished in-bottle leaving behind delicate carbonation, typical of Pétillant Naturel-style wine. The wine aged on fine lees in-bottle until disgorging on January 24th, 2023.
The resulting wine is a pale pink sparkling rosé with bright aromatics and a fruit-forward palate.
